Cowboy Beef StewIngredients2-3 lbs. The Woodruff Farm stew beef1 pkg. (12-14oz) dried bean soup mix with seasoning packet2, 14.5 oz. cans diced tomatoes with green peppers and onions2 T vegetable oil1, 14.5 oz. can beef broth3 cups. frozen diced potatoes (optional)Salt & PepperMethodSoak beans in water overnight, in refrigerator, according to package directions. Reserve seasoning packet. Coat stew beef with seasoning from packet. Heat 1 tablespoon vegetable oil in large, heavy bottom pot, until hot. Gently add ½ of the stew beef and brown on each side. Set browned beef aside and add remaining oil in pot. Heat until hot, gently add remaining stew beef and brown on all sides. Remove browned beef and pour off excess oil. Return beef to the pot. Add drained beans to the pot along with the tomatoes and beef broth. Bring to a boil. Reduce heat and allow to simmer on low for 2 hours or until beef is fork tender. Add in potatoes and simmer for 15-20 minutes until potatoes are tender and heated through. Season with salt and pepper.
